Ingredients

    Hawaiian-inspired poké bowls

  • 3 tbsp rice*
  • ½ red onions, finely sliced
  • 4 tbsp sauerkraut (live)
  • 2 egg omelette, cut into ribbons*
  • ½ avocado, diced
  • 4 tbsp red cabbage, thinly sliced
  • 8cm cucumber, sliced
  • 2-3 large radishes, thinly sliced
  • ≈120g watermelon*, cut into bite-sized pieces
  • ≈120g red pepper, diced
  • 2tbsp pink pickled ginger
  • 2tbsp wakame

    Toppings

  • 2tbsp poké sauce
  • a few pickled jalapeños
  • zigzag Kewpie mayonnaise
  • a good sprinkle shichimi togarashi*
  • a good sprinkle ground dried seaweed*
  • a few chopped chives

NOTES*

The base, centre spot of your poké can be occupied by any number of grains. You could use :black/ wild/ white rice, or bulgar wheat, or even couscous.

For the protein source, I love adding omelette ribbons and have often swapped that for spiced chickpeas or feta. Traditionally, Hawaiian pokés were served with raw ahi tuna or salmon.

For the sprinkles, I have used pul biber (Aleppo pepper,) here - but my prefered sprinkle is definately Japanese shichimi togarashi.

For the sweet, fruity spot, I have used watermelon here - but have used mango, flat peach, ripe plums, figs, and pommegranate arils - take your pick!

switch & swap - this has got to be one of the most versatile dishes. Add whatever floats your veggie boat: cooked beetroot, kimchi, pesto, alficoz, mangetout ...!


Method

Hawaiian-inspired poké bowls

after prepping your ingredients, Simply start with your rice in a small mound in the centre and arrage all the fruit & veg around it. Then add your protein* in the middle (on top of the rice).

Drizzle over the poké sauce before zigzagging kewpie mayonnaise across the top.

To serve, sprinkle over your spice choice and fresh herbs.
