Bone Marrow Hamburger

This bone marrow hamburger is the tastiest burger I’ve ever eaten. The addition of roasted bone marrow gives this hamburger next level umami – Mmm 😋.

Although I am a self-confessed flexitarian, there is something I am very rigid about; and that is the quality of the food that goes into my body. When I eat meat, I want to know that the animal was well cared for, that it was pastured or snuffled around in woods. When it comes to animal protein; eat less, eat better.

Ingredients Hamburger

4 x 7-10cm marrow bones
750g good quality course ground beef
Himalayan Salt
Freshly Ground Black Pepper

Provolone cheese or smoked scarmoza
12cm flour tortillas
Coriander leaves

Coriander Garlic Sauce

Bunch of coriander leaves with tender stems
Garlic cloves
Lime juice
Extra Virgin Olive Oil
Himalayan Salt
Freshly Ground Black Pepper

Chipotle Sour Cream

Crème Fraîche or Soured Cream (cream with lemon juice)
Chipotle Peppers in Adobe; blitzed
Lime juice

Instructions

For the hamburger, roast the marrow bones in a 200ºC oven for twenty minutes. Leave to cool and when the bones are at room temperature, remove the marrow and mix it well with the ground beef. Season well before forming the patties – the featured patties are 120g (and unfortunately not rested after cooking!). The patties can then reside in the fridge until required. Remove the patties from the fridge and allow to come up to room temperature before cooking.

For the coriander & garlic sauce, use a stick blender to blitz the sauce. For the chipotle sour cream, simply stir in as much – or as little – blitzed chipotle as you like. As with all sauces – taste and adjust as you go.

To cook the provolone cheese, place the provolone in small oven-proof (no plastic handle) pan. Cook over a medium heat – on the hob. Once the cheese has started to bubble, place it under a hot grill to finish.

To cook the hamburger, make a small thumb dent in the centre and season well. Grill, griddle or BBQ to your desired doneness.

Plate up as in the main photo – using half a hamburger patty per tortilla.
